Variations on Tomato Soup

These are my variations on the the basic Tomato Soup Recipe

1.Chili and paprika tomato soup, add 1 finely chopped chili and 2 tablespoons of paprika with the onions and garlic.
2. Cream of Tomato Soup, add1/2 pint of cream to the soup before serving or swirl in a spoonful of cream to each serving just before serving.
3.Tomato and Chicken Soup, add to the soup as a garnish small pieces of stir fried chicken and fresh coriander.
4.Bean and Tomato Soup, add your favourite beans to the soup after sieving and blending the soup, such as chick peas, canellini, borloti, haricot, flageolot,black eyed. Use either tinned beans, frozen ready cooked beans or cook your own.
5.Bean, Chorizo and Tomato Soup, add your favourite beans and slices of chorizo sausage after sieving and blending.
6.Tomato and Coriander Leaf Soup, add lots of chopped fresh coriander as a garnish.
7.Roast Tomato soup, roast all the vegetables in the oven with olive oil after preparing and then make the soup with these roasted vegetables to get a roasted flavour.
8. Tomato and Pasta Soup, add pasta to the soup after sieving and cook until the pasta is soft, garnish with Parmesan cheese or a local cheese such as cheddar.
9.Carrot and Tomato Soup, substitute 4 carrots for the potatoes in the recipe. Garnish with grated carrot.
10. Tomato and Orange Soup, use orange juice as part of the stock. Garnish with pieces of fresh orange or satsuma and grate some orange peel on the soup for a tangy flavour.
11. Chinese Style Tomato soup, add stir fry beef pieces as a garnish. Add a dash of soy sauce and use miso as a stock base. Add crispy noodle garnish.
12.Bacon and Tomato Soup, garnish with crispy bacon, small pieces of thin toasted bread and blue cheese such as danish Blue or Stilton.
13.Tomato Bread soup, try what the Italians do, take chunks of bread in bite size pieces and place in the soup bowl. Ladle the soup onto the bread, garnish with grated cheese.
14.Pesto and Tomato Soup, add a teaspoon of pesto to each serving of soup and swirl into the soup.
15.Butter Bean and Tomato soup, add a tin of butter beans to the soup after sieving, garnish with parsley.
16.Yogurt and Tomato Soup, garnish the soup with a swirl of natural yogurt, a squeeze of fresh lemon juice and basil leaves, a fresh combination of flavours.
17.Mexican style Tomato Soup, add a tin of red kidney beans to the soup. At the start fry in a chopped chili and serve with some grated cheese and tortilla chips.
18.Corn and Tomato Soup, add a large tin of sweet corn to the soup and garnish with crispy bacon and chopped parsley.
19.Tomato Curry soup, add 1 tablespoon of curry powder with the onions at the start of cooking. garnish with chopped coriander and serve with naan bread or chapatis.
20.Tomato and Olive Soup, serve with black or green olives,lemon juice, fresh basil and Italian bread.
It is amazing how many different healthy options can come from one recipe that are nutritious for vegans and vegetarians.

Basic Tomato Soup

Ingredients for Basic Tomato Soup recipe.
The final tomato soup mixture can be left with texture or the seeds and the skins can be sieved out like the above photo shows.
This is the basic tomato Soup which is my basic recipe for at least 20 different tomato soup recipes.
Ingredients
5 lbs--26--13 cups of tomatoes, all cut into 1/4s tomatoes
8 cloves of garlic chopped fine
2 potatoes diced fine( these help to thicken the soup)
3 onions diced fine
olive oil for frying about 6 tablespoons
1/4 cup of fresh marjoram chopped(or thyme/basil depending on your preference)
salt and pepper
vegetable stock, enough to cover the soup ingredients, it can be fresh, homemade or Swiss bouillon
Method
1. Put olive oil into a large pan , heat to medium heat and fry /sweat the garlic and onion , for about 5 minutes or until they are soft but not brown.
2. Add potatoes and fry for about 5 minutes.
3. Add the tomatoes and fry until they start to break down and become softer.
4. Add enough stock to just cover.
5. Cook for about 30minutes until they are soft.
6. Put all the soup through a blender
7. Get a large bowl and a metal sieve.
8. Pass all the soup from the blender through the sieve to get a fine soup.
9. Add salt and pepper to taste
10. Serve
This tomato soup is then used for at least 24 variations that I am going to write in the next blog.
